Welcome to your outdoor cooking experience here at Crowe River Retreat! We’ve put together this guide to help you cook like a pro, maintain the griddle surface, and keep everything in top shape for your stay.

What to Cook: From Breakfast to BBQ

The beauty of a Blackstone griddle is that it replaces both your traditional BBQ and your indoor frying pans, all with a delicious, restaurant-style sear.

  • Breakfast (My Personal Favorite): There is nothing quite like a full, hot breakfast cooked outside. The griddle is perfect for pancakes, French toast, bacon, and eggs, all cooked simultaneously.
    • Pro Tip: Use a lower heat setting for pancakes to prevent burning, and save the higher heat for crispy bacon.
  • Classic BBQ Staples: Anything you’d throw on a gas grill works here—steaks, sausages, chicken breasts, and skewers. The flat top is actually better for thinner cuts or items that might fall through standard grill grates.
  • Frying Pan Classics: If you can cook it in a skillet, you can cook it here. This includes sautéed vegetables, hash browns, fajita fillings, stir-fries, and even delicate items like grilled cheese sandwiches or sautéed garlic shrimp.
  • The "Smash" Factor: For burgers, form ground beef into loose balls, place them on the hot surface, and use a heavy spatula to "smash" them flat. This creates a crispy, caramelized crust you just can't get on a standard BBQ.

How to Use Your Griddle

  1. Prep: Apply a thin layer of cooking oil to the grill surface using a paper towel (this is easiest to do when the grill is cool).
  2. Propane: Ensure the propane is turned on. If you need a refill, extra tanks are available in the garage; please refer to the How to Switch a Propane Tank instructions nearby.
  3. Lighting: Burners must be lit one at a time. Turn the left burner (by the igniter button) to high, then back it off slightly to just below the orange line.
  4. Ignite: Push the igniter button and listen for the ticking followed by ignition. Allow the burner to run for 30 seconds.
  5. Multi-Burner: Repeat for the remaining burners depending on how much cooking space you need.
  6. Preheat: Keep the LID OPEN while cooking; the griddle is designed for open-air cooking. Let it heat for about 10 minutes before adding oil and your food.
  7. Heat Zones: Remember that the center zone is the hottest, while the edges are cooler, perfect for finished items.

Cleaning & Maintenance (Please Clean After Each Use!)

Cleaning is easy! You’ll need a metal spatula, paper towels, water, and cooking oil (we try to keep the pantry stocked with avocado oil in a squeeze bottle; it's perfect for high heat. If you use the last of it, EVOO works for lower-heat meals).
  1. Steam Clean: While the grill is still hot after turning the burners off, use the squeeze bottle to squirt water over the surface.
  2. Scrape: Let the water steam and evaporate, then use the flat metal scraper (located on the grill’s bottom shelf) to push food residue into the grease trap.
  3. Wipe Down: Dry the surface with a paper towel. Pro Tip: Use your metal scraper to push the paper towel across the surface to avoid burnt hands.
  4. Protect: Coat with a VERY THIN layer of cooking oil to prevent rust.
  5. Shut Down: Ensure the propane tank is switched off. Once the unit has cooled down, close the lid and replace the BBQ cover to keep out water and debris.
